Pearl is a white wine made from 100% Dijon 777 Ribbon Ridge Vineyard Pinot Noir. Harvested early morning of October 4, 2017, it was pressed immediately into a jacketed, stainless steel tank. It underwent a gentle, all-natural decolorization process using activated carbon and clay, and after racking began a long, slow fermentation at 65 degrees. The wine was racked, fined and filtered before bottling in March 2022.
The first thing most people notice is that the wine is off-dry, but that is overpowered almost immediately by the tropical floral aromatics. Pearl features these flavors that are familiar to Pinot Noir drinkers but which are often overshadowed by the tannins and power in red Pinot Noir wines. After a few sips, the wine carves its own lane across your palate that is more about enjoying the experience than analyzing the wine.
